ISLAMABAD: Mutton yakhni, a traditional broth made with mutton (goat or lamb) and aromatic spices, is a popular dish in many cultures, especially during cold weather. A hot bowl of mutton yakhni provides immediate warmth, making it a comforting food choice during cold weather. The warmth can be soothing and help alleviate the discomfort associated with freezing temperatures.
Here is a simple recipe to make it in your kitchen and fight cold;
Ingredients
-Cumin seeds 1 tsp, cloves 4-5, coriander seeds ½ tbs, black peppercorns 1 tsp, black cardamom 1, cinnamon sticks 2, bay leaf 2, cooking oil 3-4 tbs, onion sliced 1 medium, mutton with bones ½ kg, ginger garlic paste 1 & ½ tbs, turmeric powder ½ tsp, Himalayan pink salt 1 & ½ tsp, yogurt whisked ¼ Cup, water 1.5 liter.
Directions
- In mortal & pestle, add cumin seeds, cloves, coriander seeds, black peppercorns, black cardamom, cinnamon sticks, bay leaves & crush well.
- On muslin cloth, add crushed spices & tie to make a potli & set aside.
- Add cooking oil, onion & fry in a pot until lightly golden.
- Add mutton & mix well until it changes color.
- Add ginger garlic paste, turmeric powder, pink salt, mix well & cook for 1-2 minutes.
- Add yogurt, mix well & cook until oil separates.
- Add water, and spices potli & bring it to boil; cover & cook on low flame for 60-90 minutes.
- Remove potli, add water, mix well & bring it to boil; let it simmer for a few minutes until oil appears on the top.
Sprinkle black pepper crushed & serve!
