Breakfast Option: Recipe of Oatmeal Bundt Cake

ISLAMABAD: The oatmeal bundt cake is a simple, easy and nutritious breakfast option that is also great for kids and picky eaters and the recipe is also so easy.

 Ingredients:

  • 1 1/4 cups sifted flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 cup powdered sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon powder
  • 1 tsp vanilla essence
  • 1/2 cup vegetable oil or olive oil
  • 1/2 cup milk
  • 1/2 cup raisins
  • 1 cup instant oats

Instructions:

  1. In the first step, wash the raisins and let them dry on a paper towel.
  2. In a medium bowl, sift together 1 1/4 cups of flour, 1 1/4 tsp baking powder, and 1/2 tsp baking soda. Add cinnamon powder, oats, and raisins. Stir to combine and set the flour mixture aside.
  3. In a separate bowl, beat 2 eggs using a hand whisk or an electric beater for about 15-20 seconds.
  4. In the next step, add 1/2 cup of powdered or castor sugar and 1/4 cup of brown sugar. Continue to beat on medium speed for about 30 seconds.
  5. Next, add vanilla essence and the olive oil, and beat on medium speed for approximately 1 minute.
  6. Then gradually add about half of the sifted flour mixture. After this, add half of the milk and follow with the rest of the flour mixture and the remaining milk. Beat until the batter is just combined and smooth, scraping down the sides of the mixing bowl. The batter will be thin.
  7. Pour the cake batter into the prepared bundt cake pan.
  8. Bake for 30 minutes at 180°C on the middle rack of the oven until a toothpick inserted into the cake comes out clean. Then, remove the pan from the oven.
  9. Let the cake cool in the pan for 30 minutes. Cover the pan with a towel, then carefully remove the cake from the pan. Store it in an airtight container.
