Ingredients
For Orange Puree:
- 2 cups of Orange juice
- 1/2 cup of Sugar
- Slurry (4 tbsp of corn flour + 1/2 cup of water)
For orange mixture
- 1 cup of Condensed milk
- 1/2 cup of Orange juice
For mousse
- 1 tsp of orange food colour
- 1/2 tsp of Orange essence
- Orange puree (as needed)
- Orange pieces (for garnishing, as needed)
- Mint leaves (for garnishing, as needed)
Directions
- Extract the juice from the oranges.
- Heat orange juice in a pan, add sugar and slurry and cook until it thickens.
- Let the mixture cool at room temperature and set it aside.
- In a bowl, combine condensed milk and orange juice to create the Orange Mixture. Set aside.
- In another bowl, beat the dairy cream until fluffy with stiff peaks. Note: Chill the cream overnight in the fridge and whip it with an electric beater. Note: Avoid freezing, as the cream won’t whip well after a temperature shock.
- Add the orange mixture, orange food colour, and orange essence to the whipped cream. Beat the mixture again.
- Create a layer of orange puree at the bottom of a glass and pipe the orange mousse on top.
- Orange Mousse is now ready to serve.
