How to Make Rice Kheer Pudding?

ISLAMABAD: Rice Kheer Pudding is a delectable dessert made from simple ingredients such as milk, short-grain rice, and sugar. This kind treat offers a deliciously creamy texture and a delightful flavor that captivates the taste buds with each spoonful.

Here is a simple recipe to make it for your loved ones in your kitchen.

Ingredients:

1/2 cup basmati rice, 4 cups whole milk, 1/2 cup sugar, 1/4 cup chopped nuts (almonds, cashews, pistachios, or of your choice), 1/2 teaspoon cardamom powder, a pinch of saffron strands (optional), 1 tablespoon ghee, raisins for garnish

Instructions:

  1. Rinse the basmati rice under cold water and soak it in water for about 30 minutes.
  2. Heat ghee over medium heat in a pan. Add the soaked and drained rice to the pan and sauté for 2-3 minutes until the rice becomes lightly golden.
  3. Add the whole milk to the pan and bring it to a boil. Once it starts boiling, reduce the heat to low and let it simmer.
  4. Stir the rice occasionally to prevent it from sticking to the bottom of the pan. Simmer the rice in milk until thoroughly cooked; the mixture thickens about 25-30 minutes.
  5. Add sugar to the rice-milk mixture and continue to simmer until the sugar dissolves completely. Stir in the chopped nuts, cardamom powder, and saffron strands.
  6. Continue to cook on low heat until the kheer reaches your desired consistency. It will thicken further as it cools.
  7. Once the kheer has thickened, remove it from the heat and allow it to cool to room temperature.

If desired, garnish with more chopped nuts and raisins. Serve warm or chilled, as you prefer, and enjoy your homemade Rice Kheer pudding!
