Ingredients:
For Malai Boti:
- 800g Boneless chicken
- 1 cup Yogurt
- 3 tbsp Green chilli paste
- 1 tbsp Ginger garlic paste
- 1 tsp Crushed black pepper
- 1 tsp Salt
- 2 tbsp Lemon juice
- 1 tbsp Cumin powder
- 1/2 cup Cream
- 2 tbsp Oil
- 1 heated charcoal
- 1 tsp Oil (for smoking)
For Malai Boti Pulao:
- 1/4 cup Oil
- 10-15 Black peppercorns
- 1 tbsp Cumin seeds
- 2 Star anise
- 4-5 Green cardamom
- 1 cup Onion (sliced)
- 1 tbsp Ginger garlic paste
- 1 tbsp Coriander powder
- 1 tsp Crushed black pepper
- 1 tbsp Salt
- 5 cups Water
- 3 cups Rice (soaked)
- Malai boti (prepared earlier)
- Green chillies (as required)
- Lemon slices (as required)
Instructions:
- In a bowl, combine boneless chicken, yogurt, green chili paste, ginger garlic paste, crushed black pepper, salt, lemon juice, cumin powder, and cream. Mix thoroughly.
- Heat oil in a pan and add the marinated chicken. Cook until fully done.
- Place heated charcoal on an aluminium cup in the centre of the pan, drizzle oil over it, cover, and smoke for 1-2 minutes. Set aside.
- In a pot, heat oil and add whole black pepper, cumin seeds, star anise, and green cardamom. Sauté for a minute.
- Add sliced onion and cook until light brown. Stir in ginger garlic paste, coriander powder, crushed black pepper, and salt. Mix well.
- Pour water and bring it to a boil. Add soaked rice and cook until 80% of the water evaporates.
- Add the prepared malai boti, green chillies, and lemon slices to the rice. Cover and steam over low flame for 10-12 minutes.
- Your Malai Boti Pulao is now ready to be served. Enjoy the flavoursome delight.
