Malai Boti Pulao Recipe

ISLAMABAD: Enhance your culinary experience with the indulgent richness of Malai Boti Pulao by following the recipe provided below.

Ingredients:

For Malai Boti:

  • 800g Boneless chicken
  • 1 cup Yogurt
  • 3 tbsp Green chilli paste
  • 1 tbsp Ginger garlic paste
  • 1 tsp Crushed black pepper
  • 1 tsp Salt
  • 2 tbsp Lemon juice
  • 1 tbsp Cumin powder
  • 1/2 cup Cream
  • 2 tbsp Oil
  • 1 heated charcoal
  • 1 tsp Oil (for smoking)

For Malai Boti Pulao:

  • 1/4 cup Oil
  • 10-15 Black peppercorns
  • 1 tbsp Cumin seeds
  • 2 Star anise
  • 4-5 Green cardamom
  • 1 cup Onion (sliced)
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Coriander powder
  • 1 tsp Crushed black pepper
  • 1 tbsp Salt
  • 5 cups Water
  • 3 cups Rice (soaked)
  • Malai boti (prepared earlier)
  • Green chillies (as required)
  • Lemon slices (as required)

Instructions:

  1. In a bowl, combine boneless chicken, yogurt, green chili paste, ginger garlic paste, crushed black pepper, salt, lemon juice, cumin powder, and cream. Mix thoroughly.
  2. Heat oil in a pan and add the marinated chicken. Cook until fully done.
  3. Place heated charcoal on an aluminium cup in the centre of the pan, drizzle oil over it, cover, and smoke for 1-2 minutes. Set aside.
  4. In a pot, heat oil and add whole black pepper, cumin seeds, star anise, and green cardamom. Sauté for a minute.
  5. Add sliced onion and cook until light brown. Stir in ginger garlic paste, coriander powder, crushed black pepper, and salt. Mix well.
  6. Pour water and bring it to a boil. Add soaked rice and cook until 80% of the water evaporates.
  7. Add the prepared malai boti, green chillies, and lemon slices to the rice. Cover and steam over low flame for 10-12 minutes.
  8. Your Malai Boti Pulao is now ready to be served. Enjoy the flavoursome delight.
