Pineapple Delight Recipe

Ingredients: Biscuit Crust:

• 2 cups Digestive Biscuits
• 1 cup melted Unsalted Dairy Butter

Whipped Cream:

• 1 pack Whipping Cream

Cream Cheese Mixture:

• 1 ½ cups Cream Cheese
• 1 cup Icing Sugar
• Whipped Cream
• 1 ½ cups Pineapple Chunks
• 1 tsp Pineapple Essence
• 1/2 tsp Yellow Food Colour

Assembling:

• Biscuit Crust
• Delight Mixture
• Pineapple Slices (as needed)
• Red Cherries (as needed)
• Roasted Desiccated Coconut (as needed)

Instructions:

1. Grind biscuits in a grinder and mix with melted unsalted Dairy Butter.
2. Transfer the mixture to a serving dish and refrigerate for 10-15 minutes. Set aside.
3. Beat whipping cream in a bowl until fluffy with stiff peaks.
4. In another bowl, beat cream cheese and icing sugar until creamy. Set aside.
5. Combine whipped cream, cream cheese mixture, pineapple chunks, pineapple essence, and yellow food colour in a bowl. Mix well and set aside.
6. Spread a layer of the delight mixture on the biscuit crust in the serving dish and refrigerate for 1-2 hours.
7. Add pineapple slices and cherries on top.
8. Your Pineapple Delight is ready! Sprinkle roasted desiccated coconut before serving.
