Recipe: Hot and Sour Soup for Winters

ISLAMABAD: This delicious Hot and Sour Soup is a winter essential. Make this soup and warm up yourself for the winter days.

Ingredients for Chicken Stock:

  • 1/2 kg Chicken (with bones)
  • 1 cup Onion (cubes)
  • 3-4 Garlic cloves
  • 10-15 Black peppercorns
  • 1 tbsp Salt
  • 2 ½ liters Water

Ingredients for Slurry:

  • 3 tbsp Corn flour
  • 1/2 cup Water

Ingredients for Hot and Sour Soup:

  • 3 tbsp Oil
  • 300 g Chicken boneless
  • 1 cup Carrot (chopped)
  • 1 cup Cabbage (chopped)
  • 1 cup Mushroom (sliced)
  • 1 ½ litres Chicken stock
  • 2 tbsp Chili garlic sauce
  • 2 tbsp Soy sauce
  • 1 tsp Dark soya sauce
  • 2 tbsp Chili sauce
  • 1 tbsp Vinegar
  • 1 tbsp White pepper powder
  • 1 tsp Black pepper powder
  • Prepared slurry
  • 2-3 Egg whites
  • Green onion (chopped) as required

Directions:

  1. In a pot, combine chicken, onion, garlic, black peppercorns, salt, and water. Boil for 20 minutes or until the stock is done.
  2. Remove the chicken from the stock and set aside the stock for later use.
  3. In a bowl, mix corn flour and water to create a slurry. Set aside.
  4. Heat oil in a pot, add chicken and cook until it changes colour. Add carrot, cabbage, and mushrooms; cook for a minute.
  5. Add chicken stock, chili garlic sauce, soy sauce, dark soya sauce, chili sauce, vinegar, white pepper powder, black pepper powder, and the slurry. Cook until it starts to thicken.
  6. Add egg whites and cook for an additional 1-2 minutes.
  7. Your Restaurant Style Hot and Sour Soup is now ready. Serve hot, garnished with green onions. Enjoy this delightful soup to warm up your winter day.
