ISLAMABAD: This delicious Hot and Sour Soup is a winter essential. Make this soup and warm up yourself for the winter days.
Ingredients for Chicken Stock:
- 1/2 kg Chicken (with bones)
- 1 cup Onion (cubes)
- 3-4 Garlic cloves
- 10-15 Black peppercorns
- 1 tbsp Salt
- 2 ½ liters Water
Ingredients for Slurry:
- 3 tbsp Corn flour
- 1/2 cup Water
Ingredients for Hot and Sour Soup:
- 3 tbsp Oil
- 300 g Chicken boneless
- 1 cup Carrot (chopped)
- 1 cup Cabbage (chopped)
- 1 cup Mushroom (sliced)
- 1 ½ litres Chicken stock
- 2 tbsp Chili garlic sauce
- 2 tbsp Soy sauce
- 1 tsp Dark soya sauce
- 2 tbsp Chili sauce
- 1 tbsp Vinegar
- 1 tbsp White pepper powder
- 1 tsp Black pepper powder
- Prepared slurry
- 2-3 Egg whites
- Green onion (chopped) as required
Directions:
- In a pot, combine chicken, onion, garlic, black peppercorns, salt, and water. Boil for 20 minutes or until the stock is done.
- Remove the chicken from the stock and set aside the stock for later use.
- In a bowl, mix corn flour and water to create a slurry. Set aside.
- Heat oil in a pot, add chicken and cook until it changes colour. Add carrot, cabbage, and mushrooms; cook for a minute.
- Add chicken stock, chili garlic sauce, soy sauce, dark soya sauce, chili sauce, vinegar, white pepper powder, black pepper powder, and the slurry. Cook until it starts to thicken.
- Add egg whites and cook for an additional 1-2 minutes.
