Tikka Rice Platter Recipe

ISLAMABAD: This delectable dish combines tender, flavorful chicken tikka with aromatic masala rice for an unforgettable culinary experience.

Ingredients:

For Chicken Tikka:

  • 3-4 chicken leg & thigh pieces
  • 1 cup yogurt
  • 3 tbsp Tikka masala
  • 2 tbsp ginger garlic paste
  • 1 tbsp oil
  • 2 tbsp chili sauce
  • 2 tbsp lemon juice
  • 1 tsp orange food color
  • 1/2 cup oil (for frying)
  • 1-2 heated charcoal (for smoking)
  • 1 tsp oil (for smoke)

For Masala Rice:

  • 3 tbsp oil
  • 1 tbsp cumin seeds
  • 2-3 green cardamom
  • 1-2 star anise
  • 2-3 black cardamom
  • 1 cup chopped onion
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tbsp salt
  • 5 cups water
  • 3 cups soaked rice

 

Instructions:

  1. Make cuts on the chicken pieces.
  2. Place chicken in a bowl, add yogurt, Tikka masala, ginger garlic paste, oil, chilli sauce, lemon juice, and orange food colour. Mix well and marinate for thirty minutes.
  3. Heat oil in a pan, add marinated chicken pieces and cook each side for 1-2 mins. Add leftover marinade, cover, and cook until chicken is fully done. Set aside.
  4. Heat oil in a pot, add cumin seeds, green cardamom, star anise, and black cardamom. Sauté for a minute.
  5. Add onion and cook until brown. Add coriander powder, red chilli powder, cumin powder, and salt, and mix well.
  6. Add water and bring to a boil. Add rice and cook until 80% water dries out.
  7. Cover and steam over low flame for 10-12 mins.
  8. Serve Masala Rice with Chicken Tikka and savour the flavours. Enjoy your feast!
