ISLAMABAD: This delectable dish combines tender, flavorful chicken tikka with aromatic masala rice for an unforgettable culinary experience.
Ingredients:
For Chicken Tikka:
- 3-4 chicken leg & thigh pieces
- 1 cup yogurt
- 3 tbsp Tikka masala
- 2 tbsp ginger garlic paste
- 1 tbsp oil
- 2 tbsp chili sauce
- 2 tbsp lemon juice
- 1 tsp orange food color
- 1/2 cup oil (for frying)
- 1-2 heated charcoal (for smoking)
- 1 tsp oil (for smoke)
For Masala Rice:
- 3 tbsp oil
- 1 tbsp cumin seeds
- 2-3 green cardamom
- 1-2 star anise
- 2-3 black cardamom
- 1 cup chopped onion
- 1 tsp coriander powder
- 1 tsp red chilli powder
- 1 tsp cumin powder
- 1 tbsp salt
- 5 cups water
- 3 cups soaked rice
Instructions:
- Make cuts on the chicken pieces.
- Place chicken in a bowl, add yogurt, Tikka masala, ginger garlic paste, oil, chilli sauce, lemon juice, and orange food colour. Mix well and marinate for thirty minutes.
- Heat oil in a pan, add marinated chicken pieces and cook each side for 1-2 mins. Add leftover marinade, cover, and cook until chicken is fully done. Set aside.
- Heat oil in a pot, add cumin seeds, green cardamom, star anise, and black cardamom. Sauté for a minute.
- Add onion and cook until brown. Add coriander powder, red chilli powder, cumin powder, and salt, and mix well.
- Add water and bring to a boil. Add rice and cook until 80% water dries out.
- Cover and steam over low flame for 10-12 mins.
- Serve Masala Rice with Chicken Tikka and savour the flavours. Enjoy your feast!
