ISLAMABAD: Looking for some tasty yet simple recipes? Look no further. BBQ Chicken Calzone is the perfect quick recipe to enjoy this weekend. It is a classic combination of juicy chicken filling loaded with cheese and pizza sauce.
Ingredients;
Chicken cubes 1/2 kg, black peppercorn 1/2 tsp, salt to taste, water as required, flour 3 cups, sugar 1 tbsp, yeast 1 ½ tsp, salt 1/2 tsp, oil 1 ½ tbsp, warm water 1 cup, yeast mixture 1 cup, BBQ sauce 1 ½ tbsp, hot sauce 1 tsp, coriander powder 1 tsp, mustard sauce 1/2 tsp, red chili powder 1/2 tsp, mayonnaise 1/2 cup, garlic powder 1 tsp, boiled chicken 1/2 kg, cheddar cheese as required, marinara sauce as required, olive as required, egg yolk 1 (for brushing)
Directions:
- In a pan, simmer water with salt and peppercorns. Add chicken and boil until fully cooked. Remove any foam and set aside.
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5 to 7 minutes until yeast is activated.
- Take a bowl, and combine flour, salt, oil, and the prepared yeast mixture. Knead the dough gently.
- Cover the dough with cling film and let it rest for 30 to 40 minutes until it doubles in size.
- In another bowl, shred the boiled chicken.
- Mix shredded chicken with mayo, BBQ sauce, hot sauce, mustard sauce, salt, coriander powder, red chili powder, and garlic powder.
- Sprinkle flour on the dough and knead it for another minute. Divide the dough into six portions and roll each into a thin round shape.
- Spread marinara sauce on each round, then top with chicken filling, cheese, and olives.
- Fold the dough in half, forming a half-moon shape. Seal the edges properly and make three marks on top with a knife to let air out while baking.
- Place the calzones on a baking tray, brush with egg yolk, and bake for 20 to 25 minutes at 160 degrees Celsius, or until golden brown.
