Ingredients:
4 medium-sized potatoes, 2 tablespoons oil, 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 1 onion, 2-3 green chilies, 1 teaspoon ginger paste, 1 teaspoon garlic paste, 1 teaspoon turmeric powder, 1 teaspoon red chili powder, salt to taste, 2 tomatoes, 2 tablespoons tamarind pulp (soaked in water and strained), fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them crackle for a few seconds.
- Add chopped onions and green chilies. Sauté until onions turn golden brown.
- Add ginger paste and garlic paste. Now add turmeric powder, red chili powder, and salt. Mix well and cook for another minute.
- Add diced potatoes to the pan. Stir to coat the potatoes with the spice mixture.
- Cover the pan and let the potatoes cook for about 8-10 minutes or until they are partially cooked.
- Once the potatoes are partially cooked, add chopped tomatoes to the pan. Mix well.
- Cover and cook until the potatoes are fully cooked and the tomatoes have softened.
