ISLAMABAD: Multani Sohan Halwa is a delicious and rich sweet treat that originates from the city of Multan in Pakistan. Below is a simple recipe to make it at home:

Ingredients:

  • 1 cup semolina (sooji)
  • 1 cup sugar
  • 1 cup ghee (clarified butter)
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup cornflour
  • 1/4 cup almonds, finely chopped
  • 1/4 cup pistachios, finely chopped
  • 1/4 cup cashews, finely chopped
  • 1/4 cup walnuts, finely chopped
  • 1/4 teaspoon saffron strands
  • 1/2 teaspoon cardamom powder
  • Silver or gold edible foil (optional)

Instructions:

  • Grease a plate or tray with ghee and keep it aside.
  • Mix the milk and saffron strands in a small bowl and set aside to infuse.
  • In a saucepan, combine sugar and water. Bring it to a boil, stirring continuously until the sugar dissolves completely.
  • Let it simmer for 2-3 minutes to form a slightly thick syrup. Then turn off the heat and set aside.
  • Heat the pan over medium heat and add ghee to it.
  • Once the ghee is hot, add semolina (sooji) to it. Roast the semolina in ghee until it turns golden brown and aromatic. Keep stirring continuously to avoid burning.
  • Once the semolina is roasted, reduce the heat to low and slowly add the cornflour while continuously stirring.
  • Gradually pour in the sugar syrup, stirring continuously to avoid lumps.
  • Add the saffron-infused milk, chopped nuts, and cardamom powder. Mix everything well until it forms a smooth, thick dough-like consistency.
  • Transfer the mixture onto the greased plate or tray. Spread it evenly with a spatula.
  • If using, gently press the silver or gold edible foil on top of the halwa for a decorative touch.
  • Allow the halwa to cool down to room temperature. Enjoy the rich and decadent flavours of Multani Sohan Halwa with your loved ones!
