ISLAMABAD: This classic coffee cake recipe is a timeless favourite, perfect for any occasion. Let’s dive into the delightful world of homemade coffee cake!

Ingredients:

Coffee Mixture:

  • 1/2 cup warm water
  • 1 tbsp coffee powder

Egg Yolk Mixture:

  • 4 egg yolks
  • 1/2 cup icing sugar
  • 1/3 cup oil
  • 1 tsp vanilla essence
  • 1/2 cup prepared coffee mixture
  • 150 g all-purpose flour
  • 1 tsp baking powder

Egg White Mixture:

  • 4 egg whites
  • 1/2 cup + 1/4 cup icing sugar

Creamy Milk Mixture:

  • 2 cups full cream milk
  • 1 tbsp coffee powder
  • 1/2 cup dairy cream
  • 1/2 cup condensed milk

Coffee Frosting:

  • 1 cup dairy whipping cream
  • 1 tbsp coffee powder

Instructions:

  1. Combine warm water and coffee powder in a glass jar. Mix well and set aside.
  2. In a bowl, beat egg yolks and icing sugar until creamy. Add oil, vanilla essence, and coffee mixture. Beat until well combined.
  3. Sift all-purpose flour and baking powder into the egg yolk mixture. Use a spatula to fold and mix gently.
  4. In another bowl, beat egg whites and 1/4 cup icing sugar until foamy. Gradually add the remaining 1/4 cup icing sugar and continue beating until stiff peaks form. Set aside.
  5. Gradually fold the egg white mixture into the egg yolk mixture using a spatula.
  6. Pour the batter into a baking dish and bake in a preheated oven at 160 degrees Celsius for 10-15 minutes. Allow to cool at room temperature.
  7. In a bowl, mix full cream milk, coffee powder, dairy cream, and condensed milk. Set aside.
  8. Prick holes in the cooled cake using a stick.
  9. Pour the creamy milk mixture over the cake and refrigerate for 2-3 hours.
  10. In a separate bowl, beat dairy whipping cream until fluffy with stiff peaks.
  11. Add coffee powder to the whipped cream and beat again.
  12. Spread the coffee frosting evenly over the cake.
